The Modì by Tino Paiolo is born from the dedication of skilled hands: it is ripened in caves with great care, until it reaches the maximum level of goodness that we expect. By tasting it by itself you will feel its granularity melt in your mouth, along with all the flavour of our splendid valleys.

RIPENING

At least 60 days.

INGREDIENTS

Raw milk, salt, rennet, milk enzymes. 

TEXTURE

Ivory white, crumbly and granular at the minimum ripening time. It becomes more compact as the ripening progresses.

FLAVOUR

When young it has a distinctive, harmonious and delicate flavour. It becomes more savoury and spicy as it ripens.

RIND

Inedible. At the minimum ripening time
it is reddish yellow, smooth, tending to rigid and regular. It takes on a darker colour and becomes thicker and wrinkly as the seasoning progressers.

PAIRING RECOMMENDATIONS

Drinks

A structured and full-bodied red wine is recommended, such as Barbaresco or Nebbiolo. The combination with a slightly sour Weiss beer is interesting.

Food

Delicious as a sauce for potato gnocchi, Modì is particularly suitable in risottos, savoury pies, paired with polenta or fondues. It is excellent to be enjoyed by itself, but it also goes well with honey.
