Our cows are fed exclusively on selected premium feed: noble grains, local hay, and pasture grass. Attention to animal welfare and the protection of biodiversity are the guiding principles of our production cycle; this ensures our cheeses retain the authentic flavor of the pastures. <\/p>\n

The milk is processed at approximately 38\u00b0C; only in this way are the enzymes, proteins, and vitamins transferred unaltered to the cheese, making it not only more authentic but also more flavorful.<\/p>\n

The resulting cheese is a unique product with an intense and ever-changing taste. Each wheel releases different flavor notes depending on the cow’s diet at the time of milking. <\/p>\n

We have collaborated for years with the ANARB Genetic Center (National Association of Brown Swiss Cattle Breeders) to best protect and preserve our animals and this typical Alpine species. Our farm is among the first in Italy to be certified for welfare standards, longevity, and animal health. <\/p>\n
