A bastion of tradition and cheesemaking expertise, its harmonious and fragrant flavor has made it one of the most popular cheeses in the Piedmont region. Notes of butter, bread, and yogurt.

FOOD AND WINE PAIRINGS

Excellent for creaming risottos and in dishes featuring hazelnuts or walnuts. |

Pairs well with a glass of white wine such as Erbaluce di Caluso; if more aged, a red wine like Cabernet or Grignolino is recommended. |
CHEESE PRODUCED WITH RAW MILK
INGREDIENTS: raw milk, salt, rennet.
PASTE: soft, with small and widespread eyes. Straw-white in color.
AGING: large wheel, at least 300 days. Small wheel, at least 15 days.

STORAGE: serve at room temperature, but store in a cool place (4°C).
RIND: non-edible. Smooth, light straw color.
CERTIFICATION: authorized by the Consortium for the Protection of Toma Piemontese PDO cheese.
