IT IS NOT JUST CHEESE.

For us at Tino Paiolo a cheese is all there is before, from the breeding of cows to the production of milk, up to the art of refining. Our cheese is the “lived happily ever after” of a beautiful story, set in Piedmont, written and interpreted by us.

WE ARE BREEDERS.

We at Tino Paiolo are first and foremost breeders. The best milk comes from the well-being of animals, their health and their nutrition. This is why we are very careful about what our cows eat: selected hay and noble cereals allow us to produce a naturally good and genuine milk.

WE ARE
CHEESE MAKERS.

We at Tino Paiolo believe in the value of manual skill and craftsmanship. We do not use any machinery to produce our cheeses: we do everything by hand, in full respect of the Piedmontese dairy tradition. We take care of every step in detail, such as the choice of the cloth for the extraction of the curd.

WE ARE
REFINERS.

For us at Tino Paiolo, time is a great protagonist of our story. Our stone cave is a magical place, where each wheel of cheese finds its “habitat” to mature and become perfect, resting on spruce boards. The ripening in the cave is what leads every cheese to become a great little masterpiece.

Because in the end goodness is the simplest thing there is. And all Tino Paiolo cheeses promise only this: to be good in every shape, in every consistency, in every nuance.
