5 days of processing before being placed in a cave to rest. It is aged exclusively on fir wood planks until it achieves its characteristic crumbly texture and elegant character.

FOOD AND WINE PAIRINGS

To be enjoyed on its own, with honey or forest fruit jams. An excellent seasoning for potato gnocchi and risottos. |

A structured, full-bodied red wine is recommended, such as Barolo, Barbaresco, or Nebbiolo. |
CHEESE PRODUCED WITH RAW MILK
INGREDIENTS: raw milk, salt, rennet.
PASTE: crumbly and grainy, ivory-white in color. As aging progresses, it takes on a more compact structure with an ochre-yellow hue.
AGING: at least 60 days.
WEIGHT | DIAMETER | HEIGHT: large wheel: 6 kg | 24 cm | 14 cm. Small wheel: 2 kg | 14 cm | 11 cm.
STORAGE: serve at room temperature, but store in a cool place (4°C).
RIND: non-edible. At minimum aging, it is reddish-yellow and smooth, tending to be rigid and regular. It takes on a darker color and becomes thicker and more wrinkled as aging progresses.
