CHARACTER
Produced exclusively with summer cow’s milk, it is characterized by the typical flavors of alpine pasture herbs. Unique varieties of mountain flora that give this product a rare taste of great intensity.

To be enjoyed on its own or with a slice of crusty bread. Suitable as a seasoning for potato gnocchi or risottos. |

Ideal with a full-bodied red wine such as Barolo. To be discovered with a glass of passito or a Trappist beer. |
CHEESE PRODUCED WITH RAW MILK
INGREDIENTS: raw milk, salt, rennet.
PASTE: crumbly and grainy, ivory white in color. As aging progresses, it takes on a more compact structure with a straw-yellow ochre color, with possible blue-greenish veining.
AGING: at least 60 days.

STORAGE: serve at room temperature, but store in a cool place (4°C).
RIND: not edible. At minimum aging, smooth and regular, yellowish-reddish in color. As aging progresses, it takes on a darker color, becoming thicker and more wrinkled.
CERTIFICATION: authorization from the Castelmagno PDO Cheese Protection Consortium.
