CHARACTER
Well-known and widespread in Piedmont, its square shape makes it recognizable at first glance. It is a cheese of great prestige, characterized by a flavor that becomes more savory with aging.

Ideal for creaming risottos and for fondues. Pair it with honey or Tropea red onion jam. |

We recommend pairing it with a glass of red wine from the Langhe region, such as Barbera and Dolcetto, or a Pinot Bianco. |
CHEESE PRODUCED WITH RAW MILK
INGREDIENTS: raw milk, salt, rennet.
PASTE: fairly firm texture, elastic with very small scattered and irregular eyes. Ivory white color.
AGING: at least 30 days.

STORAGE: serve at room temperature, but store in a cool place (4°C).
RIND: not edible. Thin gray and/or reddish, sometimes with yellowish reflections. Elastic, smooth and regular with possible reddish patches on the sides.
CERTIFICATION: authorization from the Raschera PDO Cheese Protection Consortium.
